The story
Chinito runs the counter at a tiny sushi bar where Dominican flavor meets Japanese technique.
Customers sit down one at a time and order from the menu. Build each dish in the right order and serve it before you mess it up.
Get it wrong and Papá — the old-school sushi master in the 寿司 headband — appears out of nowhere with an open hand. Three slaps and the shift is over.
